Here's a recipe for chicken and dumplings my mom really enjoyed while she was here, so I decided to post it for her and anyone else who may be interested.
Chicken and Dumplings
prep time: 10 min. Start to Finish: 30 min.
1 1/2 cups milk
1 cup frozen peas and carrots
1 cup cut-up cooked chicken (a can of chicken works great in this recipe because
you can't tell the difference)
1 can (10.75 oz.) condensed cream of chicken soup
1 cup Original Bisquick mix
1/3 cup milk
1. In 3-quart saucepan, heat 1 1/2 cups milk, the peas and carrots, chicken and soup to boiling, stirring occasionally.
2. In small bowl, stir Bisquick and 1/3 cup milk with fork until soft dough forms. Drop dough by 8 spoonfuls onto boiling chicken mixture. Reduce heat to medium.
3. Cook uncovered for 10 minutes. Cover and cook for 10 minutes longer.
Makes 4 servings. 14 g. fat per serving 340 calories

Cathy is just a little bit too normal....well let's say dull. You need to add some spice to your life. I mean for pete's sake, she strains her Manwich so it doesn't have any peppers or the good stuff in it. That is just crazy. You might as well use tomato paste.
